Baobab Eats: Chicken Salad

I am not a fan of pre-made salads of any kind but sometimes a craving strikes and well I had to give in. I decided to give the chicken salad a try at my local organic market and was VERY disappointed. I went home that night and made my own, Paleo version. Give it a try when the mood strikes you:

What you’ll need for the easiest chicken salad ever:

2 Cooked and chopped chicken breast ( I chopped my chicken in the Ninja Auto-IQ)
1/2 Chopped yellow onion
1/3 cup diced celery
1 Avocado – mashed
Salt and pepper to taste (my preference is ATC Black and Pink Himalayan salt)
-Bibb lettuce leaves

Mix the first four ingredients together in a bowl, season with salt and pepper, and then spoon into lettuce leaves.
Roll lettuce leaves up, stick a toothpick in and serve!

I served this yummy lunch with a side of black grapes, apples slices and a orange. The kids loved it!
