Every Thursday I’ll be showcasing one of the many “Baobab Eats” recipes I have been playing around with all year, just in time for your weekend shopping trips. While I’m not an expert chef, I love flavorful, healthy food. I hope you all will enjoy these cooking experiments and use them often on your wellness journey!
What You”ll Need:
4 skinless chicken breast, cut into squares
1 package of chicken apple sausage, diced
4 cups fresh string beans
2 cups stewed tomatoes (here is the recipe I use, only substituting the parsley for basil)
3 tablespoons of coconut oil
1-2 dashes of red pepper flakes
1 yellow onion, diced
Season chicken breast with salt, pepper, onion and garlic powder. Set aside. Add 1 tablespoon coconut oil to your pan (be very careful as it can burn quickly) and add onions. Sautee onions until translucent, then add chicken. Chicken should be browned on both sides but not cooked all the way through. Remove both onions and chicken from the pan, add additional coconut oil and red pepper flakes and sausage. Cook sausage until completely done.
Once done add, chicken, onion, and string beans to the pan. Pour in stewed tomatoes, cover skillet and simmer until chicken is fully cooked and string beans are tender. Serve over rice, cauliflowe rice or a sweet potato mash.
This is a one skillet meal, so not only is it healthy, it’s a cinch to clean up, which is the Baobab Eats Way!
