As we gear up for the holidays, I’ve been getting a lot of alerts regarding food recalls, its disturbing to say the least. The latest from a favorite Sabra Dipping Company. In a statement the company stated:

Sabra Dipping Co., LLC is voluntarily recalling certain hummus products made prior to November 8, 2016 due to concerns over Listeria monocytogenes, which was identified at the manufacturing facility but not in tested finished product.

The list of hummus products being recalled is rather lengthy and if you happen to have any of them (dated for sale by Jan 2017) you should throw them out, immediately. When I saw the 50 state recall my first reaction was AGAIN, because Sabra issued a recall earlier in the year. My second reaction was “Well hummus is pretty easy to make, so no real worries”.
I enjoy hummus and during my lady of leisure year I taught myself how to make a very simple but yummy version. Here’s the recipe from Epicurious, Enjoy!!

  • 2 cups canned chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 2 garlic cloves, peeled and crushed
  • 2 tablespoons lemon juice, or as needed
  • 1/4 cup olive oil
  • Kosher salt and freshly ground black pepper
  1. Preparation
  2. 1.In the bowl of a food processor, combine the chickpeas, tahini, garlic, lemon juice, 2 tablespoons of olive oil, and salt and pepper to taste. Purée the mixture into a smooth paste, adding water to thin the mixture as necessary. ( I used the drain liquid from.the can to thin mixture)
  3. 2. Adjust the seasoning with lemon juice, salt, and pepper to taste. Refrigerate until ready to serve. Serve garnished with the remaining 2 tablespoons olive oil.
  4. So very simple, so delicious and less chance of a recall and sickness when oreparednat home. Visit Epicurious for hundreds of other versions a well.
  5. Happy Thanksgiving!!
