Quick Bites: Curried Chicken Salad

Most of our bad food decisions stem from being unprepared for when hunger strikes. But with a dash of forethought and a great imagination, you can take what’s already in your fridge and make a tasty meal.

In this first installment of Quick Bites you’ll find an easy recipe for a delicious and Paleo-friendly curried chicken salad; a great post-workout meal.

What You’ll Need (for 1-2 servings):
1/2-1 cup Cooked chicken, cut up into small pieces or shredded
1-2 Tbsps Greek or almond yogurt (use the almond yogurt if you’re on a strict Paleo diet; another alternative is to make your own Paleo mayonnaise)
1 Tbsp Curry powder
1/4 tsp Adobo (low-sodium is best)
Black pepper (to taste)
Red pepper flakes (to taste)
1 tsp Olive oil
1/2 Tbsp Balsamic vinagrette
1-2 cups Shredded cabbage and carrots

Optional ingredients:
Romaine lettuce
Granny Smith apples, cut into small pieces (or your favorite type of apples)
Raisins
Celery
Slivered almonds
Grapes, halved

What You Do:
Mix all of your ingredients together in a bowl and enjoy!

See how easy that was? Feel free to adjust the levels of the spices and amount of chicken and cabbage to fit your needs. Those who don’t follow a Paleo diet might enjoy this salad in a wrap or on some homemade bread.
