I saw this recipe on Food over Rock N Roll a few weeks ago and could never bring myself to make it for the Giants. So I just stored it back in my Paleo recipe folder. Strapped for time, a freezer full of frozen food I put aside my feelings about Meatballs (blech) and got to cooking. And let me tell you THEY WERE DELICIOUS. Here’s my modified version of their recipe.Here’s what you’ll need:
1 lb. Ground turkey
1 cup Ground cashews (to substitute for cheese; use mixture below as a substitute for breadcrumbs)
2 Yellow onions, grated
2 Large carrots, grated
3 Garlic cloves, minced
Chopped spinach leaves
1 can Low sodium stewed tomatoes (to make a sauce)
Mixture to Replace Breadcrumbs:
1 cup almond meal
1 tbs sea salt
1 tbs fresh cracked pepper
1 tbs fresh flat leaf parsley
1 tsp garlic powder
1 tsp dried oregano
1/4 tsp red pepper
Preheat oven to 350 degrees (Fahrenheit). Drizzle olive oil on a baking tray.
Mix all ingredients in a large bowl. Roll meatballs to your desired size (put a little cooking spray on your hands to avoid). Bake in the oven for about 35 to 40 minutes. Serve topped with the stewed tomatoes.
I have made these meatballs several times, lightly frying them once just to see if it made a difference in taste. Nope. Throughout my Paleo journey I have not given up all dairy so I’ve used goat cheese in this recipe. I say all this to emphasize how important it is to try new things and use what works for you.
