I love a good brunch, don’t you? But let me tell you, these Brooklyn/Manhattan brunch prices are not always wallet-friendly or add ingredients or sides that aren’t helpful to my healthy living plans. On days when I want to save money and temptation, nothing beats a tasty homemade quiche and potatoes brunch at home!
What You’ll Need (for 4 servings):
5 large eggs
1 ½ cups fresh spinach, chopped
1 cup chopped sausage (your choice; I use spicy turkey)
½ medium red bell pepper, chopped
½ medium green or yellow bell pepper, chopped
½ medium onion, chopped
1 clove garlic, minced
½ cup coconut milk (or whatever milk you like to use)
½ tsp baking powder
1 TBSP olive oil
Sea salt and freshly ground black pepper to taste
Mashed or roasted sweet potatoes (please don’t tell me you need a recipe for that…)
What You Do:
Preheat the oven to 350 degrees.
Cook the sausage, peppers, garlic and onions together in the olive oil; place in a 9-inch pie dish when done.
Whisk together the eggs and milk until evenly mixed; add in other ingredients and mix well (break up that yolk!).
Pour the egg mixture over the cooked sausage mixture and bake in the oven for about 30 minutes or until you get a nice toasty coloring around the edges.
Slice up your quiche and serve on a bed of mashed sweet potatoes or with roasted potatoes on the side. Either way, be prepared to never leave your house for brunch fare again!
